    Claim your share

    Slide across the steer, from one eighth to the whole animal, and put 25% down. That share is yours from that moment.

  2. 02

    The pen fills in order

    Every steer sells in eighths. Once all eight shares on a steer are claimed, we lock in a processing date and the next steer's board opens.

  3. 03

    One trip to the abattoir

    The steer is hand delivered to our local abattoir, where your beef is cut, vacuum-sealed, and frozen. Half a steer and up choose their own cut sheet.

  4. 04

    Pickup day

    Processing and aging takes about two weeks. Once your beef is ready, settle the balance and we'll set up a pickup time by email or phone, at the ranch in Overton or with a Dallas meetup.

What does grass-finished mean, and why does it cost more?
Most "grass-fed" beef is finished on grain in a feedlot for the last months. Ours never is: our cattle are on pasture from birth to the trailer. It takes longer to raise, and it's the reason the beef tastes the way it does.
What's in an eighth?
Roughly 40–45 lbs packaged: 20–25 lbs of ground beef, 2–3 ribeyes, 2–3 NY strips, 1–2 filets, 1–2 top sirloins, 1 specialty cuts, your pick, plus roasts, ribs, marrow bones, and 2 lbs of primal grind. Every eighth you add is another box like it. From a half up, you write the cut sheet yourself.
When do I get my beef, and where?
Once a steer's board fills, it's hand delivered to our local abattoir, and your beef is ready about two weeks later. We'll set up pickup at the ranch in Overton, or coordinate a Dallas meetup.
How much freezer space do I need?
About 2 to 2.5 cubic feet per eighth. An eighth fits in a standard freezer drawer; a quarter wants a small chest freezer; a half or whole needs a dedicated deep freeze (8 to 20 cubic feet).
Is the price really fixed?
Yes. Every share is a flat price with a guaranteed minimum packaged weight, printed on the menu. No hanging-weight math, no surprise invoice at the butcher.
What if my share is bigger than what's left on the current steer?
You get the rest of that steer and the first cut of the next one. Same beef, same pasture; your pickup just waits for the second animal's date.
What if the board doesn't fill?
The steer stays on grass until it does. Grass is the one thing we're not short of. Your deposit holds your share, and we don't process a steer piecemeal.
How long does the beef keep?
Vacuum-sealed and frozen, 12 months easily. Most families finish an eighth in four to six months of regular cooking.
